Love runny eggs - nothing worse than getting a lovely wobbly poached egg at the canteen, then finding the yolk has gone solid. I’d rather have a half raw egg than a hard yolk one.

A few mates were on a long weekend in Amsterdam, in their b and b the owner cane to ask how they wanted their eggs for breakfast, Instead of asking for poached, scrambled, fried, one of my mates just asked for runny. As the owner then went round the table with the same question everyone else answered with runny.

Runny is the only way

I have eggs for 5 breakfasts per week, but style varies.

Probably fried (yes, runny) x2, omlette x2, scrambled x1. Poached maybe once per month.

Out of interest, what are your favourite ingredients for an omelette? Mine are spme onion, garlic, quarter orange bell pepper, lashings of spinach, some mushroom, one cherry tomato (cut in half) and a small amount of cheddar, salt&pepper with typically 3 or 4 eggs.

Spinach (sometimes Rocket), Smoked Salmon and Feta cheese (sometimes goat cheese) and Walnuts. :thumbup:

As for the tortilla española, my usual breakfast of choice and the 'runny eggs' argument...

I'd prefer completely firm rather than completely runny eggs. With runny eggs you risk leaving too much of it on your plate.

The best option is bottom firm, top runny.
