Low and Slow lamb shoulder from the weekend. Smoked for the first hour or so with hickory and rosemary, then left to cook at about 130c for about 5 hours. Grass fed Irish beef rib - 6hr cook with hickory smoke for the first 2hrs or so.

Cooked at around 120/130c until the internal hit 95c and the toothpick test was good.

Wrapped and rested for about an hour - result was great.

Just flat on the grill and above, but far enough away from direct heat.

Cranked up, it can get pretty crazy hot inside the kamado, the naan cooks in about 2 mins and puffs up a treat.
