I'v only done one 12lb brisket but I just used salt, pepper and garlic powder for the flavour in the rub, with some paprika in for colour. Simple is best, I think. Post pics.

I have a photo exactly like that, GWO2. We walked down from there - had calves of fire for the next couple of days. We also went up the Schafsberg (?) on the steam train and did few trips on the Wolgangsee ferry - it's a greta spot for a few days r&r.
