EF - if your brisket was hard to pull apart, it was under not overcooked.

I'd recommend trying a USDA brisket from Tom hickson, turner and George or JL butchers in west byfleet, all of whom do nationwide delivery.

Expensive but worth it.

On cooking temperatures for low and slow (all in Fahrenheit) 225 - this is very low and slow. I wouldn't go lower. Good for pork shoulders and brisket. 250 - this is low and slow standard temp. Also EF... if you're cooking a British brisket, cook until it probes like butter. This could be as high as 215 internal. Another reason for your smoker to be above 205.

Does anyone on here spray their meat whilst it's cooking? I used to. Every couple of hours. It helps the Maillard reactions on the surface which is where the sugars, fat and heat create the dark bark. It does not keep the meat inside moist, at least not directly. I don't any more because I'm lazy. ...

I have a 57cm wsm called Fat Sandra.

She is great but if I were to buy new from scratch I'd get a 47. When I've cooked on a 47, the fuel economy is noticeably better and it's rare I need to cook at massive volume.

The 37 is a novelty item and isn't worth your time.

Laurent there is nothing wrong with decent cocoshell briquettes or heatbeads. As for rubs... 25% salt, 25% pepper, 25% sugar, 25% other Other being herbs, onion, garlic, paprika, chilli, turmeric,... Basically whatever will work. appart from the stench. Heatbeads and high quality coco shell briquet...

Chunks over chips. A couple of fist sized are enough for any cook. Soaking chips is a bit of a weird one. It makes them last a little longer but mainly just produces loads of steam.
