Re: The official "Low and Slow" BBQ thread
You're in Oz. This changes everything. Aussie grain fed briskets seem to be ready earlier temp wise. A friend of mine cooks Aussie all the time. I will ask him for some advice for you. With ribs, only ever rub shortly before cooking. Not sure if you did or didn't but salt will cure pork quickly if l...

Just looked at your pictures. Sterling effort. Ribs look great to me. And the brisket too. Keep at it.

Re: The official "Low and Slow" BBQ thread
EF - if your brisket was hard to pull apart, it was under not overcooked.
I'd recommend trying a USDA brisket from Tom hickson, turner and George or JL butchers in west byfleet, all of whom do nationwide delivery.
Expensive but worth it.

Re: The official "Low and Slow" BBQ thread
On cooking temperatures for low and slow (all in Fahrenheit) 225 - this is very low and slow. I wouldn't go lower. Good for pork shoulders and brisket. 250 - this is low and slow standard temp. Good for the above and everything else. 275 - pushing a little higher. Can be good for ribs, finishing bu...

Re: The official "Low and Slow" BBQ thread
Also EF... if you're cooking a British brisket, cook until it probes like butter. This could be as high as 215 internal. Another reason for your smoker to be above 205.

Re: The official "Low and Slow" BBQ thread
Does anyone on here spray their meat whilst it's cooking? I used to. Every couple of hours. It helps the Maillard reactions on the surface which is where the sugars, fat and heat create the dark bark. It does not keep the meat inside moist, at least not directly. I don't any more because I'm lazy. ...

The best fuel I found for the WSM in the UK , which allows me to get up to temperature is Weber, (the normal cheep brands I struggled to get it hot enough), is there any other recommendations? Re: The official "Low and Slow" BBQ thread
I have a 57cm wsm called Fat Sandra.
She is great but if I were to buy new from scratch I'd get a 47. When I've cooked on a 47, the fuel economy is noticeably better and it's rare I need to cook at massive volume.
The 37 is a novelty item and isn't worth your time.

Chunks over chips. A couple of fist sized are enough for any cook. Soaking chips is a bit of a weird one. It makes them last a little longer but mainly just produces loads of steam. I'm not convinced of its usefulness for the end product. Oh yeah, 100% chunks over chips. And remember that meat only...

When you travel as an English speaker, the first question you get is "English?". When you tell them "no, i'm Scots/Welsh/Irish", the atmosphere immediately lightens and becomes friendlier. Clifford to start or Itoje to join as another 6.5 with Launchbury coming in? I love big Joe but I'd rather see how Clifford goes. If it were Robshaw out I'd maybe think differently simply because of the actual numbers on the shirts but still. As for Nowell, I'd like to see Yarde given another run. I...

I only have one issue with your team, AC, and it's Mako Vunipola.
I know he was part of a decent scrummaging performance the last two weeks but he isn't he best loosehead in England let alone the world.
I wish Corbisiero was still playing.

Occasionally might be a good idea to score some points.
It was crazy seeing so many points turned down today. Someone within the set up clearly has a thing against points.
