Smokin' ;) I always put a beer can filled with water right in the middle when using a Weber design when braai'ng. Nice to control the heat and flames with the lid to create hot moist air convecting while also sorting out the flames from fat dripping. too many coals in there boet...hate to crit anot...

Tackle would depend on the fish you target.
