Am I a complete idiot thinking chicken lasagne would work?

Post by Dark »

I mean not idiot in general, as most on here would just say yes.

But was trying to think of something to do for dinner.

I think it would be nice, but my wife looked at me like I was a nutter.

Can't me much different to a parmi or tortilla, or whatever.

You’d have to use chicken mince

Plus, you’d have to change the sauce, surely?

Tomato base with chicken doesn’t sound right

Perhaps a white/mushroom type sauce?

Iwould go the opposite (mainly because I detest chicken minced.

White sauce would work and plenty of chicken dishes use a tomato based sauce.

Butter chicken, chasseur, rague, coq au whatever it is called

I actually think sliced meat in a lasagne would be nicer texture wise than mince to be honest.

As long as it is sliced small

Is she Italian?

Chicken with pasta is pretty much unheard of in Italy...

Agree, use chicken mince and keep everything else the same.

If you’re going to be a dumb cnut and use large cuts of chicken and a cream based sauce (as well as the béchamel) in your Frankenstein lasagne why not be less of a dumb cnut and just make a chicken carbonara with some thick slices of speck, nice mushrooms a dry white and some fresh herbs?

It better lends itself to the tweak.

Carbonara is guanciale, eggs, pecorino and pepper...

I think what you're suggesting is some kind of anglicised chicken fiasco...

I would simply recommend keeping the chicken well away from the pasta.

Lasagne Bianco is a thing. When I've had it the chicken, probably chickens in a restaurant, have been poached, shredded, and then both the chicken and broth used to make a very loose baked lasagne (way more liquid than you'd normally associate with lasagne) with the addition of lasagne sheets (who knew) and some mozzarella. The first time I had it was at someone's house, and she was pretty insistent she'd been making it for 60+ years and the only thing you added to the broth, other than water and whole chicken, was parsley, lots of parsley, and then it's left to poach for a long, long time so the chicken's falling apart and the stock has taken on much of the chicken flavour, tbh I don't see why you couldn't have aromatics other than parsley, just as I'm sure in world not controlled by 80 year old Nonnas you could add a bit of spinach to the filling.

Probably worth looking up a recipe because on serving you would (based on my experience) be using bowls and for those not familiar with it be thinking is that not a soup?

I have it at work sometimes. It’s not amazing but edible.
Substitute basil pesto for the white sauce. No cheese- maybe bit of parmesan and Sundried tomatoes. Torn roasted Chicken pieces.

Nothing at all wrong with chicken lasagne.
Tbh Chicken ricotta and spinach canelloni is on eof my favourite pasta dishes. It goes well with a rich tomato red wine and pesto sauce.

Traditional lasagne isn’t tomato sauce, the layers are ragu and bechamel. Start with that as a base concept and you should be fine.

I think you will have to season the chicken mince pretty seriously. You may want to cook it up in some white wine. Some ragu recipes use white wine instead of red so it’s not that far off.

Ask for balsamic with olive oil for the bread, cheese with fish or extra cheese in a dish with cheese already in it and see how you get on.

Seems to outrage everyone I mention it to, but lasagne is better with quartered boiled eggs mixed in with the mince.
