Butcheries don't generally list its venison as a generic "venison", except maybe in pies. Normally they will list the specific antelope, popularly kudu, springbok or blesbok but sometimes eland or gemsbok, depending which part of the country. Very seldom warthog, which tastes similar to pork
AC, if you are worried about the venison in SA you can try the snoek. It is a great fish for Kiwis if you don’t google it before eating it.

Lamb is the meat of a young sheep that is less than a year old. If your butchers are selling mutton as lamb then they are scammers. Nigerian butchers?
All butchers and supermarkets seem to use "lamb" as a generic term for "sheep's" meat

Not in the U.K.

Lamb, Hogget, mutton.
Same in NZ.

SA seems a bit haphazard with their meat labelling.

Beef labeling is okay. Pork is pork but sheep's meat has really become an issue to me since this thread :)

I think the grading is done well at the abattoirs but are ignored once the meat reach the butchers

Lamb used to be top for me but the quality has dropped on the NZ domestic market since the 1980s with fewer butcheries vs. supermarkets and an emphasis on export. That plus me now needing to cook it rather than mum’s Sunday roast see it third in my estimation behind beef and chicken.

jdogscoop wrote: Fri Aug 06, 2021 5:45 pm Sadly in all seriousness the trad butchers have gone from the middle class Port Melbourne neighbourhood where I usually reside. Coles supermarket and the new Woolworths have put paid to that. Having noted that, the excellent South Melbourne Market is in our neighbouring suburb and will never be bested. There are multiple butcher shops in that outfit if you're looking for truly quality cuts.
You are not wrong regarding the South Melbourne markets. Terrific place.

How are we preparing this lamb?

As for turkey, we’ll yeah, chilli is nice
Was on an outback tourist sheep farm in WA with kelpie running over the sheeps' backs and a guy shearing Merino in ultra fast time etc.
Really upset the farmer when he claimed that Merino were the healthiest, best wool and tastiest sheep in the world.
I asked him if he had ever eaten heather-fed Wicklow lamb or wild Welsh Mountain lamb.
In front of about 10 tourists, he lost the cool and started ranting on about opinionated immigrants and that Merino were the ultimate in everything from university degrees to hand to hand combat
I worked out he had never tasted really fine lamb
Sounds like an idiot

I’m not nationalistic about our lamb quality, but we eat a lot of lamb here, cooked in many different ways, and so we have views on that aspect of it

I can't pick a favourite meat but if I was pushed I'd have to say long pork. The sweetest and most taboo of all meats.

Chicken is okay too.

Chicken. Is tasteless. Its open to how you flavour it.

I like beef kidney.

However the best beef steak is a Hanger steak, followed by rib eye. You need luck with the latter

Beef kidney is offal, thats true.

Hanger is for the cultured set. If you want to impress a foodie, go with that. Fillet is for plebs with money. Rib eye is for the partially educated.

This thread is about the wonders of chicken

If I wanted to discuss steak, I might mention spinalis dorsi.

They probably don’t stock it in Morrison’s though, so you may not have tried it

Morrison’s is an English supermarket. I assumed you were English, sorry.

And people claiming unchallenged knowledge of the ‘best’ steak and nominating rib eye as an example, should be able to recognise the Latin name for ribeye cap.

Nope, don't know any Latin.

Pulling your leg man. Listen, I respect anyone who likes and considers food. Respect for this thread.

My point is I think chicken has great mouth feel but that its main attributes is that its a blank canvas upon which a good or bad cook/chef can do what they like.

Also, hard to beat the way Japanese cuisine treats meats and fish.

Steak is good and everything, but roast chook is something you could eat 3x a week without breaking a sweat

I like the Portuguese burger when I’m feeling ethnic.

Fish and chips are the closest equivalent, but not as good I think

What is it about chicken that we like so much?
Really good beef is number 1 for me followed by pork belly, Chicken probably isn’t going to medal.

Actually I have changed my mind.

1: Asian Chicken
2: Pork belly
3: Roast chicken

With one addendum

A decent Peking duck, which is hard to get with all the necessary added bits fvcks them all over.

Ir just needs to be cooked and rendered properly

Admittedly not cooked properl can be shit.

Cooked properly she is basically melt in your mouth meat, with not much fat, and with some crackling to have after.
