I'll do all the dressing. It's a speciality. I've done it since I was ten, taught by a professional. My dad.

Oi. I didn't say I was better. I just like doing it. We have the utensils too, to tease the last morsels out.

I can do cockles as well. Dig them up at Wells Next the Sea, bring them home and pop then in a large container of seawater and pop some wholemeal flour on the top.

They disgorge the sand.

Steam them for a minute of two then eat them with a bit of pepper and vinegar.

Want any tips about lobster? Or whelks. (On second thoughts, don't bother about the whelks.)

Again, these tips are normal knowledge where I come from, luckily though we were bright enough to leave it to a merchant.

I buy lobster from the same merchant I buy the crab from in weybourne, they also get me slip sole and bass when it's landed.

Whelks are fabulous in stir fries, slice thinly and cook in any sea food recipie Chinese dish.

Oh no. I dress myself up in finery as I separate body and carapace.

With greatest delicacy I remove the claws.

Then I smash the crustacean to bits with a hammer. In a subtle sort of way.

I make a spread from the brown bits and serve the lot with home baked bread.

A weekend here is a proper weekend.
