So how old is NZ lamb when its killed?


Lamb is traditionally eaten at Easter in the NH, which means they are barely a couple of months old.

Much of the lamb in Europe would be called hogget in New Zealand. Sheep born in a particular calendar year and slaughtered before 30 June the following year is classified as lamb, so it can be 18 months old rather than 12.

There’s nothing more tedious than parochialism about cuisine. It’s surely appropriate to argue over battles fought, sports contests waged between nations etc. But arguing about food? Very gay, and not in the good homosexual preference and practices way.

French national identity is partly based on its cuisine. Hence why the road to an EU trade deal usually goes through Paris first. :nod:

No - some farms sponge their sheep to have lambs in Dec/Jan - so they can sell as spring lamb in April & get those high prices. One of my neighbours does it (it is the exeption - but it does happen)

Sorry, yeah, that can be done as well, it's an exception as you say and I think you can only use the term 'spring lamb' in those circumstances. But EU regs say it can be sold as lamb if it meets the description I've posted as well.

In Spain lambing season is dec-jan but because there is demand all year round they stagger it to occur 3 times a year.

Lamb here is killed mainly for Lechal (milk lamb) and usually 20-30 days old. To be considered milk lamb it must be under 45 days old.

As an example, Wicklow spring lambs are generally available shortly after St.Patricks Day, while some of the best Connemara lamb would be prime around June/July

Spring Lambs are highest price in Easter because there aren't many of them about. People lamb in Janurary, but they are few and far between.
