The Lamb Shank

Stupidly expensive now though, given they used to basically be dog food.

Tend to agree......At winter any way.... Though you can't beat slow cooked mutton soup on a cold day

Lamb Shank is voted New Zealand’s favourite lamb cut - Beef + Lamb NZ

The humble lamb shank has officially been voted New Zealand’s favourite lamb cut in the Great Kiwi Lamb-Off which was run in celebration of National Lamb Day, which took place yesterday. Following seven hotly contested rounds - which received a whopping 22,000 votes - the shank was awarded the coveted title.

In the final, shanks received roughly two thirds of the vote against lamb legs to be officially crowned the winner of the Great Kiwi Lamb-Off. You can see the results here.

CEO of Beef + Lamb New Zealand, Rod Slater - who is a butcher by trade - noted that the shank hasn’t always been held in such high regard.

"In my day, the shank was given away as dog tucker but over the years its popularity has grown so much that it is now New Zealand’s favourite lamb cut. It’s quite the turn around."

The rise in popularity of the shank can be attributed to chefs and restaurants who have profiled the cut on their menus. Michael Coughlin, a Beef + Lamb Platinum Ambassador Chef who now works as brand ambassador for Provenance Lamb, said that chefs have really put the cut on the map.

"The elevation of the lamb shank has been driven by chefs who have sought out new and creative ways to utilise the whole carcass. Nose-to-tail eating is very much at the heart of the New Zealand food service industry which has seen the shank become a mainstay on many menus up and down the country.

"With the impact of Covid-19 being fully felt by the hospitality sector, we are seeing chefs move to showcase cuts that are suitable for takeaways. The shank very much falls into this category, so if there is ever a time to go and sample the amazing array of lamb shanks on offer it is now."

The Great Kiwi Lamb-Off saw eight lamb cuts compete for the crown of New Zealand’s favourite. These cuts included legs, cutlets, mince, chops, rump, ribs and fillet along with the eventual winner the shank.

Actually a mate of mines dad when we were kids used to work at the freezing works and all the workers got the lamb cheeks.

Just lightly fried.

Food dreams are made of.

Can't really buy them though.

Slow cooked shanks in a red wine jus and mashed spud, it's pretty decent. Not sure I'd choose it over the more traditional leg roast with dirty old pan gravy though.

Ok, that may be taking things a bit too far. Swap 3 and 4 around in my list. Possibly even shanks up to 2. Then daylight to 3. Then sliding down a razor blade strewn, broken glass covered, barbed wire wrapped balustrade, then another All Black RWC win.

Shanks are fine, but I prefer a more tender cut that doesn't have to be slow cooked.

Rack/Cutlets would be my preference.

Kind of the shin bit above the hoof.

You can get front leg ones which are smaller and cheaper. And back leg ones with more meat.

You basically slow cook them as it is obviously a hard working unit when alive.

But if you do it right and have a decent jus. She is fall off the bone stuff which melts in the mouth. Great with mash.

Kind of old school comfort winter food.

A leg of Lamb should include a small shank.

6.groucho, as someone who used to frequent Brixton, I'm surprised and appalled you don't know what a shank is! :lol:

Chump Chops are my favourite - more meat than a cutlet and more juicy.

Such a shame that Welsh Salt Marsh lamb is not readily available in NZ.
The superior quality of Welsh lamb would destroy NZs sheep farming industry if the NZ people ever had it.

Again depends on which cut. I get so much venison chucked my way but I really don’t like it. For me it’s beef then lamb/pork then chicken as far as staple proteins go.

Welsh Marsh Lamb is perfectly sustainable, much more sustainable than most sheep farming.
It's an excellent product.

Welsh Marsh Lamb is perfectly sustainable, much more sustainable than most sheep farming.
It's an excellent product.
More sustainable than other UK and yank sheep farming by the sounds. Looks and sounds very nice. Now how the fudge do I get a hold of some?

Lamb is tender but you can not beat the taste of a nice Hogget. Slow roasted with rosemary and mint sauce . Lovely doubly.

Essex new spring Lamb , salt marsh at Dedham.

Slow roasted shoulder yesterday, finished the skin off under the grill .

With our monthly lamb, we usually ask the butcher to cut everything into chops to braai, the rib is kept whole, also to braai and the leg of lamb is kept whole for roasts.
